Tomatoes stuffed with eggplant salad

Ingredients:
1 big eggplant
1 onion-optional
3 tablespoon oil
2-3 tomatoes
salt
pepper
parsley

Directions:
Bake the eggplant in a hot oven or roast it until it gets a crust that can be removed easily with a knife, peel it while it's still hot, let it drain well, and chop with a wooden or glass chopper (metal would work too but the eggplant will turn darker in color).
Set in a bowl and mix with the oil poured little by little. Add salt and peper.
Optional: add finely chopped onion.
Choose small and firm tomatoes and remove the inside with all the seeds. Fill with the eggplant salad, then place all stuffed tomatoes on a platter and decorate them with a sprig of parsley for each tomato.

Noo, i am good only in making salads...and eating them of course. :) I am still learnging to cook good. :))
